Serves : 4

2 -3 chicken breasts sliced

3 eggs

200g cooked rice

1 garlic clove

1 tbsp grated fresh ginger

1 tsp chili flakes

100g mange tout

100g baby sweetcorn

100g frozen peas

1-2 tbsp of soy sauce

1 small bunch of chopped coriander

 

Method

  1. Cook the rice and leave to one side
  2. Scramble the 3 eggs and leave to one side
  3. In a large pan or wok, lightly cook the garlic, chill and ginger in a little oil
  4. Add the chicken and vegetables until they cook through
  5. Add the rice, egg, soy sauce and coriander and stir well while still on the heat
  6. Serve
