Serves : 3-4

Glug of olive oil

1 onion

1 carrot

1 courgette

1 pepper (any colour)

2 celery sticks

1 clove of garlic

Handful of chopped cabbage

1 tin of chopped tomato

1 squeeze of tomato puree

1 tsp of mixed herbs

1 vegetable stock cubes

200ml approx. of passata

1-2 teaspoons of marmite

½ bag of 10-minute minestrone mix (available in most supermarkets)

Extra boiled water if needed

 

Method

  1. Sweat off the onions, carrot, peppers, courgette and celery until starting to soften. Add all of the other ingredients and bring to the boil, simmer until everything is cooked through adding boiled water as and when the soup looks too thick.
