Buddha Bowls

“These are a mix of vegan/vegetarian style salads which can contain a mix of raw or freshly cooked vegetables, beans and pulses, you can also add in grains like quinoa. The aim is to get as much colour into them as possible to look something like the pictures below – PS. You can add eggs, meat and fish if you wish”


Makes 4 buddha bowls:

For the sweet potato (can also use chickpeas)

1 large sweet potato

1 tbsp olive oil

1 tsp smoked paprika

1 tsp cumin

Salt and pepper

Cube the sweet potato and mix these ingredients together and place in the oven on 180 degrees for 30-40 minutes.


For the peanut sauce:

1 -2 tablespoons of peanut butter

1 tsp soya sauce

A sprinkle of chilli flakes1 tiny squeeze of honey


Method

Divide this mixture between 4 bowls with:

1 packet of ready-made quinoa

1 avocado

1 pack of mixed leaves

1 any cooked or cooled veg like broccoli or asparagus

1 small pack of fresh coriander

1 bunch of chopped spring onion

Drizzle the peanut sauce over the top

Add poultry, meat, fish, shellfish, eggs or cheese for extra protein.
