Veggie bean and kale soup


Ingredients - Serves 4-6

1 onion

2 cloves garlic

1 red pepper

1 tbsp tomato puree

1 tbsp mixed herbs

1 can butter beans

1 can pinto beans

1 can chopped tomatoes

300ml vegetable stock

2 tsp of marmite

4 handfuls of kale


Method

1. Sweat the onions, garlic and red pepper in a little olive oil.

2. Stir through the tomato puree and herbs and add all the other ingredients.

3. Bring to the boil and turn down to a simmer and cook for 20-30 minutes.

4. Add more water and seasoning if needed.
