Serves : 2

1 tbsp coconut oil

1 bunch of chopped spring onions

2 chicken breasts

1-2 cloves of garlic

1-2 tsp of fresh ginger

1-2 tsp of Chinese 5 spice

3 tbsp of honey

4-5 tbsp of soy sauce

1 packet of stir fry vegetables of choice

1 packet of bean sprouts

1 tbsp of corn flour mixed in cold water to form a thinish paste that you can pour

 

Method

  1. Heat coconut oil in a pan and cook the spring onion for 2-3 mins, add in all the garlic, spices, honey and soy sauce and stir briefly
  2. Add in the corn flour mix bit by bit to thicken the sauce to desired consistency, add in more honey water and soy sauce if needed
  3. Add in all the vegetables, tofu and sprouts and cook till softened and coated fully with the sauce
  4. Serve on its own or with wholegrain rice
