Serves : 3-4

2 chicken breasts

1 packet of piri-piri spice blend (available from most supermarkets)

2 sweet potatoes



  1. Marinade:  Coat the chicken in the piri-piri spice, cover and leave in the fridge for 10 minutes -2 hours 
  2. Heat grill to medium, and heat oven to 190 degrees. Pierce the sweet potato, place on a baking tray and cook in the oven for 50mins to 1 hour.
  3. Place the chicken under the grill and cook for 35-40 minutes turning once. Once cooked serve the sweet potato with the chicken and serve with a side salad or vegetable of choice

 NB – You can use Moroccan spices, curry spices or Cajun spices, they all work well with sweet potato and salad.  These can also be batch cooked and eaten the next day cold.
