Serves : makes 8-10 muffin balls

500g turkey mince

1 cup of ground up oats (you can do this in a blender or food processor)

1 grated courgette

1 grated carrot

1 bunch of spring onions finely chopped

1 egg

1 tablespoon of tomato puree

salt, pepper and mixed herbs

 

Method

  1. Mix all of the ingredients together in a bowl and divide into 8-10 balls (should be a bit larger than a golf ball)
  2. Place the balls on a lined baking tray and bake in the oven for 35 minutes on 180 degrees (or until cooked through).
  3. You can eat them hot or cold, they will keep in the fridge for 3 days in an airtight container.
  4. Serve with salad of choice.
