Serves : makes 8-10 muffin balls
500g turkey mince
1 cup of ground up oats (you can do this in a blender or food processor)
1 grated courgette
1 grated carrot
1 bunch of spring onions finely chopped
1 tablespoon of tomato puree
salt, pepper and mixed herbs
- Mix all of the ingredients together in a bowl and divide into 8-10 balls (should be a bit larger than a golf ball)
- Place the balls on a lined baking tray and bake in the oven for 35 minutes on 180 degrees (or until cooked through).
- You can eat them hot or cold, they will keep in the fridge for 3 days in an airtight container.
- Serve with salad of choice.
