Makes 1 great big batch
1 tin black beans
1 tin kidney beans
1 tin pinto beans
2 onions chopped
1 red pepper chopped
3 cloves of garlic
2 tbsp tomato puree
1 tsp chili flakes
1-2 tbsp chili powder
1 tsp thyme
1 tsp smoked paprika
2 tins of chopped tomatoes
1 veggie stock cube
2 tsp sugar
1 bad of chopped coriander
Method

- Sweat the onions pepper and garlic in a little olive oil on a low heat for about 10-15 mins until soft and caramelized
- Add the paprika, chili flakes, chili powder and thyme and stir for 1 minute to let the spices infuse and heat.
- Add the tomato puree and stir
- Add all of the other ingredients and boil and simmer for up to one and half hours.
- Stir through the chopped coriander.
Serve with rice, quinoa or baked potato or half a roasted butternut squash.
