Makes 1 great big batch

1 tin black beans

1 tin kidney beans

1 tin pinto beans

2 onions chopped

1 red pepper chopped

3 cloves of garlic

2 tbsp tomato puree

1 tsp chili flakes

1-2 tbsp chili powder

1 tsp thyme

1 tsp smoked paprika

2 tins of chopped tomatoes

1 veggie stock cube

2 tsp sugar

1 bad of chopped coriander




    1. Sweat the onions pepper and garlic in a little olive oil on a low heat for about 10-15 mins until soft and caramelized
    2. Add the paprika, chili flakes, chili powder and thyme and stir for 1 minute to let the spices infuse and heat.
    3. Add the tomato puree and stir
    4. Add all of the other ingredients and boil and simmer for up to one and half hours.
    5. Stir through the chopped coriander.

    Serve with rice, quinoa or baked potato or half a roasted butternut squash.
